More than thirty different grape varieties have been tested to come out with a rigorous selection that would successfully react to the soil and to the particular climate of the Tuamotus. The selected vines currently used on the vineyard are :

The carignan variety
This vine arrived in the south of France from Spain around the years 1100. It has robust wood and provides beautiful black grapes with a sweet juice. This vine reaches its vegetative cycle only in five months in French Polynesia. Pergola trellising and very long pruning grants this vine with its best results : well colored alcoholic wines with a beautiful structure as thanks to the short vegetative cycle, the grapes are small and hence extremely dense. Planted on more than 500,000 acres, this vine is the number one grape variety grown in France. It also is very popular in Spain, Italy and Greece.

The Muscat de Hambourg variety
The origin of this variety is unknown.
It has been named after the fact that it has been cultivated for years in the greenhouses of the cold regions of northern Germany. This variety doesn't cope well with humidity but gives, when grown in intensively sunny regions, beautiful black bluish juicy grapes with muscat flavors. Known as THE reference when it comes to table grapes, this variety also makes excellent fruit juices and highly flavored rosé wines. This variety is widely spread in Italy, Romania and Greece.

The Italia variety
Engendered from a mix made in 1911 between the Bicane variety and the Muscat de Hambourg variety, it used to be named the Ideal in France. This variety is robust and delivers large loose grapes with a fleshy and crispy muscat flavor from its big amber-yellow grapes. The hot weather found in Rangiroa combined with the pergola trellising techniques and the Cordon de Royat pruning techniques with the use of long canes, perfectly suits this vine for an optimal result. It only takes four months in French Polynesia to get a complete cycle, from the vine pruning to the maturity of the grapes.
