Crispy mahi-mahi and crunchy curried vegetables

Ingredients

1.75 lb mahi-mahi fillet – rice paper wrappers - 2 peppers - 1 red onion - 1 celery branch - curry - salt - pepper - 2 tomatoes - 1 garlic clove - 1 bunch of fresh coriander

Preparation

  • Cut the mahi-mahi fillets into 6-inch strips.

  • Sauté the thinly sliced vegetables in olive oil and add a pinch of curry powder

  • Place the mahi-mahi strips on the wrappers, add the curried vegetables, roll tightly into a fat roll and keep regriferated

  • Blanch and dice the tomatoes, keep in a small container

  • Add the chopped garlic and coriander.

  • Cook the mahi-mahi rolls in olive oil and serve with the tomato rougaille...
